Summer is great time to cook duck breast on the grill.
Rub breast with 5-spice, cinnamon, salt and pepper. With a sharp knife, score hash marks into the skin side of breast.
Remember: duck fat is very flammable!
Use these tips for successful grilling: If you are using charcoal, cook breast on the edge of grill, away from red coals. If you are using gas, turn up all of the burners for five minutes. Then turn off the middle burner and grill your breast over the off burner.
For a real treat, grill a few peaches halves along side the duck. When the duck is ready, slice and smother with grilled peaches and serve with a summer vegetables.
